RECIPE
* 2024 has just started and we’re already experiencing severe winter storms here in the Midwest and even across the nation. We had school cancellations on the second week of January; even major highways were also shut down.

I was lucky I didn’t have to work during the whiteout condition. Such time gave me opportunities to reminisce about life itself and appreciate everything I have around me while watching the immense amount of snowflakes dropping and covering every inch of ground surface.

After only a few hours, the ground has transformed into a canvas of feathery snow sending everything buried under a blanket of flakes prepping for a rebirth and renewal. This is one thing I love about winter, there’s a sparkling magic in the air.

While the weather outside was freezing, in my kitchen I was whipping up some silky warm chicken and rice noodle soup that my family could enjoy while idly watching our favorite shows on TV or streaming social media on our phones.

I don’t know about other households but in my household during snow days, there’s heavy traffic to and from the kitchen – each one is grabbing snacks in the fridge or cupboards, warming up soup or leftover food in the microwave, making or warming up pizza, making sandwiches, or assembling their own versions of charcuterie board of some sorts.
One of my personal go-to winter comfort foods is a warm soup, just like this recipe I’m sharing with you all!
